ORIGINAL NAME FOR THIS COOKIE IS LEMON TEA CAKES DUE TO THE FACT THAT THE BATTER FOR THE DOUGH IS SIMILAR TO CONSISTENCY OF CAKE BATTER-BUT A LITTLE THICKER. IT'S A STICKY DOUGH TO WORK WITH BUT IT'S WORTH IT.
I USE VEGETABLE SHORTENING TOO SO IT'S HEALTHIER THAN BUTTER AND THE COOKIES STAY TENDER AND KEEP LONGER.

CHEWY COCOA BROWNIES
SOFT, MOIST AND CHEWY THESE BEAUTIES CAN BE ENJOYED TOPPED WITH ICE CREAM AS AN AFTER DINNER TREAT!
ESTIMATED PREP TIME: 20 MINUTES COOKING 25 MINUTES YIELDS 12 BROWNIES
INGREDIENTS:
1 & 1/3 CUP ALL-PURPOSE FLOUR
3/4 CUP Nestle Toll House baking Cocoa
1/2 tsp. Baking Powder
1/4 tsp. Salt
1 & 2/3 Cup Granulated Sugar
3/4 Cup butter (1 & 1/2 sticks) or margarine melted
2 Tblsp. Water
2 Large Eggs
2 tsp. Vanilla Extract
3/4 cup chopped nuts (optional)
powdered sugar to sprinkle over brownies
Directions:
preheat oven to 350 degrees Farenheit. Grease 13 x 9 inch baking pan
Combine: flour, cocoa, baking powder and salt in medium bowl. Combine sugar, butter and water in a large bowl. Stir in eggs and vanilla extract. Stir in flour mixture and nuts. Spread into prepared baking pan.
Bake: for 18-25 minutes of until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack . Sprinkle with powdered sugar. Cut into bars. And lastly Enjoy!

Lemon Poppy Seed Cookies so Yummy!
MAKES ABOUT 30INGREDIENTS:
¼ cup fresh lemon juice, plus 3 ½ teaspoons freshly grated lemon zest (2 to 3lemons)8 oz. (2 sticks) unsalted butter 2 cups all-purpose flour 1 teaspoon baking powder ½ teaspoon salt1 ½ cups sugar 1 large egg2 teaspoons pure vanilla extract1 Tablespoon poppy seeds, plus more for sprinklingDirections/prep:1.Preheat oven to 375 degrees Farenheit. Bring lemon juice to a simmer in a smallsaucepan over medium heat;cook until reduced by half. Add 1 stick butter. Stir until melted.2.Whisk together flour,baking powder, and salt. Cream remaining stick of butter and 1 cup sugar on medium speed in the bowl of an electric mixer fitted with
paddle attatchment. Mix in egg and lemon butter. Mix until pale,about 3 minutes.Mix in vanilla and 2 teaspoon zest. Mix in flour mixture and poppy seeds.3. Stir together remaining ½ cup sugar and 1 ½ teaspoons zest. Roll spoonfuls of dough into 1 ¼ inch balls; roll them in sugar mixture. Place 2 inches apart on baking sheets. Press each with the flat end of a glass dipped in sugar mixture until¼ inch thick. Sprinkle with seeds.4.Bake until just browned around bottom edges,10 to 11 minutes. Lemon Tea Cookie Recipe I am Famous for. Enjoy!
Lemon Tea Cookies
(I recommend to you to double atleast this recipe so you can make bigger cookies, this recipe makes a lot of small cookies and I have found most people like a more larger cookie.)
1 teaspoon finely shredded lemon peel (set aside)2 teaspoons lemon juice
1/3 cup milk
½ cup margarine or butter
1 ¾ cups all-purpose flour
1 cup sugar
1 egg
1 teaspoon baking powder
¼ teaspoon baking soda
2 tablespoons lemon juice
Oven temperature 350 Degrees Farenheit
Stir the 2 teaspoons lemon juice into milk. Let stand 5 mintes. Beat margarine or butter with an electric mixer on medium high speed for 30 seconds. **Please read note below paragraph. **Add about half of the flour, ¾ cup of the sugar, the egg, baking powder, soda, lemon peel and milk mixture. Beat till thoroughly combined. Beat in remaining flour.
Drop by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in a 350 Degree oven for 10 to 12 minutes or until edges are lightly browned. Cool cookies on a wire rack. Stir together remaining sugar and the 2 tablespoons lemon juice; brush on cookies. Makes about 48 cookies.
**Note: Works best if you add Sugar ,Egg and milk mixture to butter before adding dry ingredients including lemon peel. Also I have learned that cookies turn out better if you flatten dough before baking and that you brush cookies twice with lemon sugar mix. You want all the lemon flavor you can get out of them.
